1.I Would like to know what the purpose of the parentheses is or where can i get a manual for us, to learn to use all the sma system with the correct way. 2. what’s the difference in add a return from the dasboard vs return a sale in the POS sale.

The return from the main menu is the open returns and not attached to sales. If you add return from list sales that is directly attached to sale and that sale will be locked for any future editing.
