There is a 500 Error that is showing AFTER I changed the mod_rewrite and every thing. I have my cpanel info not sure if I should put them here I dont want people to see this information. Can you please assist?

You can check server error log for 500 error details. You can let us know the error details or server access to check.

Simple POS required php7.2+ and you set the php5.6 that was causing the issues. I have set php7.4. You should be able to access the installer now.

You need to create database & user and grant all privileges to the user then use those on installation. I have checked, the user has on permission on database :( I have granted all the permissions for database, please try now.
