When I try to see the PDF for any sale, quote or try to send an email I get a 500 error and nothing happens.

Please check your server error logs and let me know the error details so that I can suggest.
You can enable app logs by changing the `log_threshold` to 1 in `app/config/config.php` and then try to download pdf again. Lastly check the latest error logs in `app/logs/` folder.
Please try both dompdf and mpdf, you can change the pdf library from system settings.
