Where can I change the text of the currency so it appears as if it's my native currency?
I know that the programming has been standardized to be in either dollar or euro.
Where is the line of code for me to change the appearance of the currency on the homepage header?

You should add/edit the current from currencies page.
If you need to edit directly, then `themes/default/shop/views/header.php` is the view file.
