Hello, I am seeing that in my local time I have for example 15 + 45 and make an adjustment of quantities at that time but in the sma it appears with time of 15 + 57, what happens because I get that?

Please check the timezone in system settings. System uses that timezone for dates.

Is it happening on sales, quotations & purchases too? If yes, would be timezone issue, may be can check server timezone. Otherwise might be due to code as I don't know any time zone with 12 minutes difference :(
The date field is for admins and owners only. For others groups system will use not use the date but current timestamp.

System save the data once you open the add page and if you leave the data will be there. Once you come back after 1 or 2 hours the same date will be used as saved in first opening of the add page.
I can't think of any other situation but I will check.
