how can I do permission for the POS staff to prevent them to close their own register? Also, permission to prevent them to see the Register details and Today's profit Today's sale ?

There is no such option. User can see the sales they made. If you need to change this, you will need to hire any developer to help you.
Today's profit is not for staff, and they can't see it. Please pay attention on group while adding user.
