I would like to know if it is possible to change the logo and the colors of the different sections, since the user to whom it is being installed is making this request to me.

We don’t offer support for modifications or modified versions. You are allowed to modify the item code as you need as per license.
The vue app code is in
resources/js/folder and then icon file isresources/js/Jetstream/ApplicationMark.vueThank you
